Gnocchi made with sweet potatoes
The preparation time for this recipe is 1h30, as it requires a cooking time. As for yield, it serves six generous servings of gnocchi. Anyway, check out the ingredients and method of preparation below.
Ingredients
- 1 kg sweet potato
- Maize starch
- 1 egg
- 1 teaspoon salt
Method of preparation
- First, put the potato to cook and wait until it softens;
- Next, knead with a fork or pass through a juicer, then add the egg and cornstarch, and mix well;
- Knead with your hands until the mixture is no longer sticking to them;
- Then, take some pieces of the dough and roll them into a 1 cm diameter tube;
- Cut the dough into small pieces of equal sizes;
- Afterwards, fill half a pan with water and salt, place over medium heat and wait for it to boil, then start putting the gnocchi to cook;
- When the gnocchi begin to float on the surface of the pan, they are ready. Thus, remove as they rise and place them in a colander;
- Finally, prepare a tomato sauce and pour it over the gnocchi to serve.
Tomato Sauce
Ingredients
- 1 kg of tomatoes
- 2 minced garlic cloves
- 1 chopped white onion
- salt to taste
- 1 pinch of sugar
Method of preparation
- Clean the tomatoes, cut them into 8 pieces and place them in a pressure cooker (do not remove the seeds or skin);
- Then add the onion, garlic, salt and sugar;
- Soon after, cover with water and let it cook for 10 minutes after taking pressure;
- That done, open the pan carefully and put all the contents in the blender, then beat until you get a cream;
- Pass the sauce through a sieve, take it back to the fire and wait for it to thicken;
- Finally turn off the heat, pour the sauce over the gnocchi and serve the preparation.
