The Écleir dessert is an adaptation of the “Choux”, made by Antoine Carême. This sweet is an icon of French confectionery that combines incredible textures and flavors. Here in Brazil it became known as “Bomba” due to its French slogan “It's a bomb and must always be devoured in a flash!”.

Macarons were first produced by nuns, it was only in 1789, after the French Revolution, that they started to be made outside convents. The final version, as we know it today, was designed in Paris by Pierre Desfontaines, and combined two meringue discs with creamy fillings, making the sweet even tastier.

Madeleine originates from the town of Commercy and was created by the maid of the Duke of Lorraine in the 18th century, known as Madeleine. This candy was improvised to save a dinner from a fiasco and ended up being so successful that in 1852, it was widely sold on train platforms.
