Christmas Recipe: Loin of Lamb with Watercress Salad

We brought a series of publications with Christmas recipes in order to increase your options for starters, main courses and desserts, with more classic and less obvious preparations, thus diversifying your Christmas dinner.

In this post, we bring the lamb loin recipe with watercress salad as a suggestion for a main course, leaving a bit of the usual for most suppers, which usually have turkey and ham.

Lamb loin recipe with watercress salad

Ingredients

1 kg of lamb loin

200 g of butter

200 g of prunes

4 cloves of garlic

½ bunch of watercress

Coriander

Mint

Black pepper to taste

salt to taste

Preparation mode

Make incisions along the loin and season with butter, sliced ​​garlic, salt and pepper. Let it sit in the mixture for at least two hours. Heat the oven to 180°C. Wrap meat in foil and roast with fat on top for approximately 30 minutes. Take it out of the oven and let the meat rest for at least 10 minutes before cutting. Serve the meat on a bed of watercress leaves, sprinkle with the prunes, coriander and mint.
