In this post, we bring the sweet potato galette recipe as an entry suggestion, with unusual elements of this occasion, but that match very well with what is considered a classic of this date.
Sweet potato galette recipe
Ingredients
1 package of ready-made puff pastry
1 yolk
400g of sweet potato
2 red onions
1 tablespoon of oil
Black pepper
salt to taste
Thyme to taste

Preparation mode
Peel and cut the sweet potatoes into thin slices, then season in a baking dish with oil, salt and pepper. Transfer potatoes to a baking sheet and bake at 180°C until tender, approximately 30 minutes. Take it out of the oven and let it rest. Roll out the puff pastry on a flat floured surface. Cut rectangles of approximately 6x8cm. Distribute the rectangles on one or two baking sheets greased with oil or butter and brush with the beaten yolk. Cover the dough rectangles with the roasted potatoes and onions cut into thin strips, finally sprinkle the thyme. Bake at 180ºC for approximately 20 minutes, until the dough is puffed and golden.
