Coconut Alfajor recipe with dulce de leche
Ingredients
In older versions of Alfajor, you find a cookie dough to compose the sweet. However, a very practical way to make this delight is with round cornstarch cookies, better known as Maria cookies. And don't worry about the taste, it's just as delicious. Check out the list with all the ingredients:
- 550 g of dulce de leche (a traditional pot);
- 1 pack of grated coconut;
- 1 pack of Maria biscuits;
- 3 bars of milk chocolate or semisweet.
Method of preparation
Now that you've separated all the ingredients, let's get our hands dirty and prepare our Alfajor. To do this, start with the preparation of the filling, which should be a mixture of dulce de leche and grated coconut. So, just put the two in a container and mix with the help of a spoon, until all the grated coconut is incorporated into the candy.
Then, take the Maria biscuits and place a spoonful of the filling on top of it, then place another biscuit on top of the filling. Now, press the two cookies a little until the candy fills all the space between them. Repeat the process until the cookies, or filling, run out.
Finally, make the topping, then chop the chocolate bars and melt them in a water bath or in the microwave. Afterwards, just wrap the stuffed cookies in melted chocolate and let them dry naturally. And don't forget not to put it in the fridge, so that the biscuit doesn't get mushy. When dry, just make another layer of chocolate around the biscuit and decorate with grated coconut. Then your Alfajor will be ready to taste!
