chicken soup recipe
Ingredients
- 1 chicken breast;
- 2 carrots;
- 2 potatoes;
- 1 chopped onion;
- 2 tomatoes (skinless and seedless);
- 1 celery stalk;
- ½ tablespoon of oil;
- 3 chicken broth tablets;
- 1 cup of washed and drained rice;
- 2 tablespoons of chopped parsley.
Method of preparation
- First, take a pan, put the oil to heat and sauté the spices (chopped onion and celery);
- Then add the chicken breast and the other seasonings, letting it brown;
- As soon as the chicken is golden, add the diced tomatoes and let them cook until they start to fall apart;
- Then pour 1 liter and a half of water (if it can be hot, even better), the chicken broth tablets, the potatoes and the carrots already cut;
- Thus, let them cook for an approximate time of 15 minutes;
- After this time, add the rice to the mixture and place over low heat. Wait about 15 minutes or watch until it is fully cooked;
- Once cooked, turn off the heat, remove the chicken breast and wait to cool down so you can shred it (tip: use two forks, one to hold and the other shreds);
- Finally, add the shredded chicken and the soup is ready to serve. Sprinkle parsley on top, if desired.

If you want to freeze the soup, leave it well packaged (sealed as well as possible) and labeled. You can take it to the freezer or freezer for up to three months. Remembering that, to defrost, just remove it from the freezer a day before and put it in the bottom part of the fridge.
