Indian Potatoes

Ingredients

  • 700g of potatoes;
  • 20g of mustard seed;
  • 2g of sweet peppers;
  • 2g of coriander powder;
  • 2 g of powdered ginger;
  • 1 L of olive oil;
  • Salt to taste.

Method of preparation

Place the potatoes in a pan with water and salt and let them cook. Once cooked, remove from the pan and let them cool. Then peel the potatoes and set aside.

Place them in a non-stick skillet with the olive oil and mustard seeds. When they start to pop, add the rest of the seasoning and you're done. Add the boiled and cut potatoes and serve them with chopped cilantro.

Wedge Potatoes

Ingredients

  • 8 potatoes;
  • Salt to taste;
  • ½ tablespoon paprika;
  • ½ tablespoon of ginger;
  • Rosemary branches to taste;
  • Oil;
  • 4 cloves of garlic.

Way of doing

Cut the potatoes into wedges, then dry them one by one. After that, put it in a roasting pan with olive oil, herbs and chopped garlic cloves. Take to preheated oven at 200º for 30 min or until golden.

Ingredients

  • 3 medium onions;
  • 1 small onion;
  • 2 garlic cloves;
  • Oil;
  • Salt and black pepper to taste;
  • 6 eggs.

Method of preparation

Peel and cut the potatoes into quarters and then into slices of about 1 to 2 cm. Wash them under running water, drain and dry gently. Then peel the onion, garlic and cut into half moon shapes.

Place in a skillet and cover with olive oil, letting it cook until the onion is transparent. Then add the potato, season with salt and black pepper and cook until “cooked” in the oil. Finally, drain.

In another container, beat the eggs together with a pinch of salt. Add the potato and onion mixture and mix everything. Put the mixture of eggs, potatoes and onions back in the skillet. Mix everything with the help of a wooden spoon and let it cook until the eggs start to curdle.

Turn the sides until they are completely cooked and that's it, just serve!
