Ingredients to make a natural yeast for breads
For this recipe, you will only need a few ingredients, namely:
- 100 ml of water at room temperature;
- 700 g of organic wheat flour;
- 225g of whole rye flour;
- 450g of whole wheat flour.
Step by step
After separating all the necessary ingredients, it's time to put your hand in the dough! The first step in making your natural yeast is mixing the organic, rye and wholemeal flours in a large bag.
Then, you must take a clean glass pot and put 1 cup of the flour mixture together with 50 ml of water. Let the mixture brew for about three days. The important thing here is to ensure that the jar is tightly closed and that no one is going to stir or open the vessel, as this could interfere with the result.
On the fourth day, you must add another cup of the flour bag and the rest of the water. After stirring the mixture a little, cover again and soak for another three days. However, unlike the previous process, now you must shake the pot a little daily.
On the eighth day, take a cup of your yeast, transfer it to a clean container, and you're done. Now just use it in the bread recipe, as you prefer.
How to feed yeast?
After these eight days, you must leave the rest of the yeast that was not used properly covered and for six days add ¼ cup of flour mixture with ¼ cup of water, at least twice per day.
