Super easy to make, the total preparation time for this gluten-free apricot and almond cookie is just 45 minutes, with a yield of up to 30 servings. Check out the required ingredients below:
Ingredients
- 1 cup of quinoa flakes;
- 1 cup almond flour tea;
- 3 tablespoons of demerara sugar;
- 1 pot of natural whole yogurt (170g);
- Half a cup of chopped apricot tea;
- Half a teaspoon of vanilla essence;
- 3 tablespoons of slivered almonds.
Method of preparation
To start preparing your gluten-free almond and apricot cookie recipe, separate a container and mix all the ingredients in it, until the dough starts to come off your hands. If you see the need, you can add one or two more tablespoons of quinoa flakes.
After this process, when noticing that the mixture is taking off from the hands, it means that it is at the ideal point. Therefore, make balls with the dough and distribute them in an oiled baking dish.
Then press them lightly with a fork. Done that, take to medium oven (180°C), preheated, for about 35 minutes or until the cookies are lightly golden.
