Study says consuming too much microwave popcorn can cause Alzheimer's

Widely consumed by a large part of the world's population, the famous microwave popcorn is almost an essential item when watching movies and series because of its practicality. However, what many probably don't know is that, when consumed in excess, microwave popcorn can cause Alzheimer's.

The presence of diacetyl in microwave popcorn

In a recent survey carried out by scientists from the Institute of Chemistry of São Carlos (IQSC) at USP, it was identified molecules linked to Alzheimer's in the brains of mice that ingested diacetyl for 90 days consecutive. This compound is responsible for giving microwave popcorn its buttery aroma and taste.

“We observed that there really is this tendency for diacetyl to damage the brain. Furthermore, during the analyses, we identified an increase in the concentration of proteins beta-amyloids, which are normally found in Alzheimer's patients.” explains Lucas Ximenes, research author.

“Furthermore, other protein alterations observed in the brain of rats may also be related to the onset of dementia and cancer”, completes the researcher.

The brain of each rat was assessed with the aid of two survey tools. One of them, called a mass spectrometer, reads and produces heat maps of the organs. Thus, it allows the possibility of observing how and in which areas specific proteins and diacetyl are distributed.

Second stage of research

In addition, there was a second round of tests with another equipment. Called a chromatograph, the device makes it possible to indicate whether such proteins have undergone any alteration, such as an increase in their concentration or any change in the structure of a worrisome nature.

Widely used in several segments of the industry, diacetyl has a greater prominence in the food industry, including for being used as a preservative and flavoring agent. In addition, it is quite common to find it in the composition of coffees, beers, chocolates, milks and yogurts.

Although its intake is approved by regulatory bodies, regular consumption of the product can be harmful to health. Furthermore, because it is included in popular foods, several studies try to understand the influence of the substance on living organisms and how it can change some biological functions.
