How to prepare cassava pudding?
Ingredients:
- 200 grams of sugar (to caramelize the mold);
- 4 medium eggs;
- 3 cups of milk;
- 2 cups of sugar;
- 1 cup grated coconut;
- 1 tablespoon unsalted butter;
- 2 tablespoons of grated parmesan;
- 3 cups of grated raw cassava.
Method of preparation:
First of all, preheat the oven to 180ºC. Then caramelize a round shape (can be those with the hole in the middle), about 20cm in diameter, using 200 grams of sugar.
To prepare the dough, use a blender and beat the eggs and milk, together with the 2 cups of sugar, unsalted butter, grated coconut and grated parmesan cheese. Beat all this mixture until you get a homogeneous consistency.
When you reach this texture, turn off the blender and mix the grated cassava with the help of a spoon, without turning it on again. Done that, pour the pudding mix into the caramelized form.
Cover it with aluminum foil and bake it in the oven (which is already preheated) in a water bath. As the water dries up, you can add more boiling water. About an hour later, when the knife comes out clean, it's done.
Done that, wait to cool down and then you can take it to the fridge and wait to get cold. Once it's like that, just remove the pudding from the fridge, unmold and enjoy this wonderful dessert.
