Main differences between white and brown rice
First of all, it is important to point out that these are not the only types of rice, although they are the most consumed in Brazil, there are also red, black and arboreal rice, among others. Each of them has a different nutritional composition.
Regarding brown and white rice, the nutritional differences occur due to the level of processing of these foods. While brown rice goes through very few processes after harvesting and therefore retains more nutrients, white rice goes through a polishing process and therefore has less nutrients.
Differences between the nutritional composition of white and brown rice
According to the Brazilian Food Composition Table (TACO), 100g of cooked brown rice contains 25.8g of carbohydrates and 2.7g of fiber. Cooked polished (white) rice, in turn, has 28.1g of carbohydrates and 1.6g of fiber in 100g.
These two types of rice also differ in terms of the amount of B vitamins, potassium and manganese, but the main difference between them is in the amount of fiber, as rice polishing removes much of from them.
White rice should not be consumed?
Many people believe that white rice should not be consumed and end up doing nutritional terrorism against this food. Well, white rice is part of the eating habits of millions of people and can perfectly form part of a balanced and healthy diet.
