As it should be, the price, which is much lower than normal, made some consumers question whether the meat offered is really sirloin steak.
But, is it really picanha?
To the sadness of those excited about the promotion, the meat offered at the market in Niterói is not what it seems.
According to Felippe Serigati, who is the coordinator of the Professional Master's in Agribusiness by FGV, the meat with a promotional price only takes the name of picanha to call the attention of consumers.
Felippe explains that this piece is actually a mixture of sirloin steak and coxão durum, a mixture that is made when the meat is cut, where the two sections are cut together.
The “true” picanha is found in the upper rear region of the ox, while the hard coxão is the meat that covers the leg of the animal. As a result, the “picanha” sold in the carioca market tends to be tougher than real prime meat.
Finally, Felippe Serigati also explains how the packaging process is used to improve the merchandising of the piece of meat.
“The sliced picanha is taken from a whole piece of picanha and separated to be vacuum packed for sale. In this sense, the meat shown in the image is probably not 100% composed of the noble part of the ox”, he said.
