Many people think it's weird or even don't know it, but when chicken is left to soak in milk it can be very tender and also super tasty, depending on the seasoning you use. It all started with Jamie Oliver's "chicken in milk" recipe.
Oliver suggests preparing the chicken in a panel with lemon zest, garlic cloves, sage, cinnamon sticks and milk. During cooking, this “milk sauce” is poured over the chicken, creating a flavorful and very tender protein.
Why does milk make chicken tender?
In addition to milk, the yogurt derivative is also excellent and achieves the same objective. This technique manages to make the chicken tender because these two foods include acids and enzymes that help break down the chicken proteins, making it softer.
Thus, we can say that many chefs use the marinade to make the chicken more tender before frying it. This same technique can be used to prepare any type of chicken, regardless of the final purpose (cooking, frying, grilling, etc.).
Other ways to tenderize chicken:
There are some other techniques that help you tenderize a chicken and not necessarily using milk, which is a food that is very expensive on the market. Also, there is trick with lemon, hammer and others.
To obtain the desired thickness for the recipe you are going to prepare, beat the chicken with the meat mallet and cover the entire surface with plastic wrap. This procedure is ideal before cooking, as it breaks down the fibers and speeds up cooking.
Depending on your preference, marinate the chicken with lemon or vinegar, for example. However, an acidic marinade, with vinegar or lemon juice, may not make the meat as tender, but in no way affects the flavor. In such cases, just use the meat mallet!
