Lemon chemistry. Chemical properties of lemon

O lemon is a fruit widely used in food preparation. It is an essential component for many individuals and is practically used routinely.

There are many people who enjoy this fruit. It's true that the taste of it is sour and may offend some, but it couldn't be different. Lemon is sour because, among the various chemical substances present in it, two are in a relatively high amount: citric acid and ascorbic acid.

As the amount of acid surpasses other substances, the flavor that prevails in the fruit is sour. Remember that the amount of acid varies according to the type of lemon, and there are several different species, around 100.

One aspect that deserves to be highlighted is difference between lemon and lime. The amount of acid in lime is greater than in lemon. For this reason, lemon is milder in flavor than acid lime.
