2nd weekly menu suggestion for the school lunch box

THE variety and the option in our diet are very important, as they guarantee us a large amount of nutrients. As our idea is to help them prepare balanced and varied lunch boxes, I elaborated another weekly menu suggestion with a shopping list, which will make food selection and snack assembly much more practical.

Weekly menu

Just like in the previous menu, it is possible to make adaptations according to personal tastes and also according to the ingredients present at home. To make it easier, I once again inserted a list of the ingredients used to prepare the menu.

  • lunch box for monday

The Monday snack suggestion has:

  • Bread with white cheese, lettuce, tomato and cream cheese;
  • Strawberries;
  • Milk with honey;

  • Cassava bread recipe:

(Recommended age: from 1 year.)

Ingredients

2 tablespoons of milk
50 ml of oil
1 egg
1/2 tablespoon of butter
1 tablespoon of fresh sugar
125 g of boiled and mashed cassava
1/2 teaspoon of salt
250 g wheat flour
1/2 tablespoon of yeast for bread

Preparation mode

Mix all the ingredients, knead the dough well and let it rest for 30 minutes. Make the balls and place them to grow until they double in size. Bake in a preheated oven at 180ºC for approximately 30 minutes.

Comments

- It is ideal that the crushed manioc is very dry. If it is a very wet puree, leave the milk for last and add it little by little.

- The amount of flour can be 125 g of white wheat flour and 125 g of whole wheat flour.

- This recipe can be made with manioc, manioc (baroa), pumpkin, sweet potato.

Makes a 500g bread.

  • lunch box for Tuesday

For the Tuesday lunch box, we have:

  • pear cake
  • Papaya
  • Milk

(Recommended age: from 2 years old, because it contains sugar.)

Ingredients

½ big pear
1/2 cup of white wheat flour
1/2 cup of whole wheat flour
1/2 cup demerara sugar
1/4 cup of oil
1/2 tablespoon of yeast
1 egg
1 teaspoon of cinnamon (optional)

Preparation mode

Beat the pear, oil, egg and sugar in a blender. Mix the flours and yeast and add the mixture from a blender. Bake in a preheated oven at 180ºC for about 30 minutes (take the toothpick test).

Comments

- 200 ml measuring cup;

- Yields 09 standard size cupcakes;

- Chopped pear can be added to the dough;

- The egg can be replaced by ½ large banana;

- To decorate, I used very thin slices of pear.

  • lunch box for wednesday

On Wednesday, we have:

  • chicken muffin
  • Kiwi
  • Whipped milk with banana

• Chicken Muffin Recipe

(Recommended age: from 1 year.)

Ingredients

1 egg
5 tablespoons of milk
2 tablespoons of oil
1/3 teaspoon salt
1/2 cup wheat flour
2 tablespoons of cornstarch
1 teaspoon of yeast
1/2 cup of shredded chicken (without squeezing the cup)
Parmesan cheese to taste

Preparation mode

Beat eggs, milk, oil and salt in a blender. Add the flour mixed with the cornstarch and yeast and beat using the pulsar button only until the ingredients are incorporated. Transfer to a bowl and mix the chicken and whatever else you want.
Place in molds and bake at 180ºC for approximately 40 minutes, until golden.

Comments

- I like to add chia, amaranth and oregano to the dough;
- 200 ml measuring cup;
- Makes 5 standard cupcake size muffins;

- For the milk not to darken, just pass it through the sieve after it is ready. Thus, the banana seeds, which are responsible for the browning of the milk, will remain in the sieve.

  • lunch box for thursday

The Thursday lunch box consists of:

  • cornmeal dumpling
  • cashew
  • Milk

Ingredients

1 egg
5 tablespoons of fresh sugar
10 tablespoons of cornmeal
1 tablespoon of wheat flour
2 and 1/2 tablespoons of oil
5 tablespoons of milk
1 teaspoon of yeast

Preparation mode

Blend all the ingredients in a blender, place them in the molds and bake in a preheated oven (180ºC) for approximately 40 minutes.

Comments

- Makes 9 standard size cupcakes.

  • lunch box for friday

On Friday lunch, we have:

  • Popcorn
  • Jabuticaba
  • Whipped milk with strawberries

The recommendation of the American Academy of Pediatrics is that popcorn should only be offered to children over four years old by the risk of choking.

Make the popcorn as usual and allow it to cool well before packing. Once cool, place in a plastic bag or tightly closed jar. So, it stays crisp for a long time, it can even be made the day before.
