Potato omelet recipe
Ingredients:
400g of potatoes;
5 eggs;
2 tablespoons of milk;
Salt to taste;
Pepper to taste;
Olive oil to taste.
How to prepare the potatoes:
- Wash the potatoes and cut them into thin slices of approximately 5 mm, preferably with a mandolin, so that the thickness is uniform;
- Grease the baking trays with a drizzle of olive oil so that the potatoes do not stick together;
- Place the slices on the baking tray and add salt and pepper, drizzling with another drizzle of olive oil;
- Mix so that all the slices are seasoned and spread well across the pan;
- Place in a preheated oven at 180°C and bake for 30 to 35 minutes or until lightly golden;
- After 15 minutes, turn them over to cook the other side.
Preparing the potato omelette:
- In a bowl, beat the eggs enough to mix the yolks and whites;
- Add the milk to the beaten eggs and season the mixture with salt and pepper to taste;
- Cook the potato slices: you can fry them in a non-stick frying pan until they are cooked and golden;
- Transfer the cooked potato slices to the same non-stick frying pan, distributing them until they cover the entire bottom of the pan;
- Pour the beaten eggs over the potato slices, shaking the pan slightly so that the mixture fills the space between the vegetable slices;
- Cover the skillet and cook over low heat. During cooking, lift the sides of the omelet slightly to allow the eggs to flow and cook evenly;
- When the eggs are firmer on the top, carefully flip the omelet using a spatula or plate;
- Continue cooking over low heat for another 2 to 5 minutes, depending on your preferred cooking point;
- Remove from heat and serve your delicious potato omelet.
For accompaniment, the salad is a great option. Enjoy!
