Panettone is usually not a very healthy option because it has a lot of trans fat and preservatives, but with this recipe, we can even put in the lunch box of children without fear.

Panettone recipe

Ingredients
400 g of wheat flour
150 g of water
4 g of dry biological yeast
100 g of fresh sugar
12 g of powdered milk
4 g of panettone essence
40 g of yolks
60 g of butter
6 g of salt
150 g of candied fruit + 100 g of raisins or 300 g of chocolate chips

Preparation mode

First place the candied fruits in a sieve and wash them well, to remove all the sugar that covers them. Let it drain well.

At bread machine, put 150 g of water, 150 g of flour and all the yeast. Program the kneading cycle and let it beat until smooth. After that, turn off the machine or end the cycle and let it sit for 30 minutes. We are making the well-known sponge.
After this time, put the rest of the flour and the other ingredients in the machine, except for the salt and the fruits or drops. Reprogram the kneading cycle and let it beat until the end of the cycle.
When the cycle ends, remove the dough from the machine, add salt and fruit or drops.

If you are going to bake in the bread machine yourself, return the dough to the machine and let it rise until there are two fingers missing from the top of the pan. At this point, if you want, make a cross cut at the top of the panettone, place a teaspoon of butter in the center, close the machine and program the baking cycle.

if you are going to bake in the oven, in a baking pan or panettone pan, place the dough in the pan and let it rise until two fingers are missing from the top of the pan. If it is in paper form, divide the dough into two parts (it will give two Panettone). Once grown, make a cross cut at the top if desired, place a teaspoon of butter in the middle and bake in a preheated oven at around 180º until golden.

For who doesn't have a bread machine, just mix well 150 g of flour with water until it is very homogeneous and let it rest for 30 minutes.

After that time, mix in the rest of the flour and the other ingredients, except salt and fruit or drops. Work the dough well and let it rise until it doubles in size. Then just mix the salt and fruits or drops and put them in the molds. Let it grow to two fingers before the edge of the shape. Place a teaspoon of butter in the middle and place in a preheated oven around 180º until golden brown.
