Green corn cake with condensed milk

Ingredients
- 4 ears of corn
- Half cup (tea) of water
- Half a cup of oil
- 1 condensed milk (can or box) 395g
- 3 eggs
- 1 and a half cup wheat flour
- 1 tablespoon baking powder
- Half a tablespoon of icing sugar for sprinkling
Method of preparation
- First, thresh the corn, cutting the grains close to the cob, and in a blender beat the corn with the water.
- Then pass this corn cream through a sieve and return to the blender.
- Then mix the oil, condensed milk and eggs and beat again.
- Now pour the mixture into a container, and add the wheat flour, baking powder and mix well.
- Pour this mixture into a round mold with a 20 cm diameter central hole and bake in a preheated oven at a medium-high temperature for 40 minutes.
- Finally, let it cool down, unmould, sprinkle with icing sugar and serve.
Tips
- You can add 100g of dry coconut or 250g of grated fresh coconut to the dough, making your cake sweeter.
- For a stronger corn flavor, prepare the cake without straining the bagasse. In that case, just beat the corn with the rest of the ingredients in the blender. It is not necessary to sift the dough, nor add the water that would be used to process it.
- If you want to replace cobs in your recipe, you can use two cans of canned corn, i.e. 400g.
- Another important detail to not let your cake wither is to pay attention to how it was baked. If the oven is set too high, it does not guarantee an internal structure and the cake may wither. However, if the oven is set too low, it will not rise.
- Ideally, the cake should remain at a constant temperature and the oven should be preheated to 180ºC.
