Potato can mess up the diet? See what experts say

A study carried out in the United States evaluated the effect that potatoes have on food. The research was carried out because, normally, diets seek to reduce the consumption of carbohydrates, and potatoes are a food rich in these biomolecules.

However, the researchers reported Journal of Medicinal Food that these plants “do not increase the risk of creating resistance to insulin, are rich in essential nutrients and are full of health benefits.” Therefore, the consumption of this food should not be seen as a villain in diets.

The study involved 36 participants, aged 18 to 60, all of whom were overweight, obese or insulin resistant – which is a problem that comes with obesity. It has even been shown that “potatoes do not negatively affect blood glucose levels. In fact, the individuals who participated in the study lost weight,” said professor and nutritionist Candida Rebello.

The research findings were justified with the claim that "people tend to eat the same weight of food, regardless of caloric content, to feel satisfied". Therefore, potatoes, which are heavier and lower in calories, can help reduce caloric intake.

The study sought to prepare the potatoes in a way that all their nutrients remained intact, so it was made with skin and everything. Thus, Rebello says, "when we compare a diet with potatoes to a diet with beans and peas, we find that they are equal in terms of health benefits."

Finally, the portions consumed by the study participants were not reduced, but in the aspect of the amount of calories ingested, with the inclusion of potatoes. In this way, it was verified that the subjects were satiated more quickly, sometimes not even eating all the food in the portions. This practice can help in weight loss, as well as in its control.
