- 1 ripe tomato
- Juice of ½ lemon
- 1 tablespoon tomato paste
- Olive oil to taste

Place the jackfruit in a pressure cooker and add a drizzle of oil. Cover with water and cook over medium heat for about 35 minutes after pressing.
After that time, remove the pressure, open the pan, change the water and turn the fire back on. About 15 minutes later, it should be soft. Then remove the skins and seeds and shred the remaining pulp. In a frying pan, add the shredded jackfruit, olive oil and seasonings, sauté and set aside.
preparing the dough
Ingredients:
- 2 cups of vegetable broth
- 4 tablespoons of extra virgin olive oil
- ½ teaspoon of salt
- 2 tea cups of wheat flour
- 1 cup of breadcrumbs (check if it is vegan)
Method of preparation:
On medium heat, place a pan to heat. Soon after, add the broth, olive oil and salt. Wait to lift boil and then leave the fire low. Then, add the wheat flour and stir a lot with a spoon until it becomes a very dense dough. Upon reaching this point, turn off the heat and wait approximately half an hour for it to cool down.
Next, place the dough on top of a clean surface and knead for 5 minutes to become smooth. Soon after, divide into 8 balls of equal sizes. Knead a little and open the center of the ball in the shape of a basket. To standardize the amount, use a tablespoon to place the stuffing and gently close by joining the sides.
Then dip the drumsticks in a little ice water and then coat them in breadcrumbs. Done that, just fry in hot oil until they are golden. Finally, place to dry on a paper towel and serve next.
