Ingredients
The purpose of this recipe is to leave the okra with a consistency that is very different from the viscous and mushy one when we cook it. In fact, we're looking to make it crunchy, and for that we're going to bread it. As for the ingredients, these will be the ones you need:
- 3 cups (tea) okra;
- 2 cups (tea) cornmeal or corn flour;
- 1/2 cup (tea) soybean oil;
- 3 tablespoons of extra virgin olive oil;
- Salt and black pepper to taste.
Method of preparation
Now that you've separated all the ingredients, let's get to the preparation, which will start with cooking the okra. For this, add the oil in a pan and then the okra cut into cubes. Soon after, stir well until all the pieces are submerged in the oil, cover the pan and then turn on the fire to let it cook for approximately 8 minutes. During that time, don't forget to open the pan at least once every minute to stir the okra well.
Once the okra is cooked, add the cornmeal or corn flour, as well as the salt and pepper, and mix well to incorporate the flour into the okra. Then, turn the heat back on and let the mixture cook for 5 minutes, not forgetting to stir it from time to time. Now, just separate another pan, add the olive oil and fry each of the pieces until they are lightly golden, and it will be ready to serve. Enjoy!
