O ice cream it can be much more than a simple dessert. That's what chef Raphael Vieira, from 31 Restaurante, defends, who promoted an Ice Cream Festival until April 2nd. He believes that ice cream can be served as a starter or accompaniment to main courses, surprising customers with unusual flavors.

The chef prepared a tasting sequence, with flavors such as bread, Jerusalem artichoke, kombucha, spirulina, onion, black garlic, honey and banana jam. The idea is to create moments of tension and provoke different stimuli in the mouth, with acidic and unctuous flavors that clean the palate.

But the highlight of the festival was the onion ice cream, an unusual delicacy that made many people curious. Unlike other flavors, which use flavorings, onion ice cream is made from a sauce of onions.
