Guinness record for most expensive ice cream was recently broken by a delicious Japanese recipe. The Byakuya ice cream, which means “white night” in Japanese, by Cellato, cost an astonishing 873,400 yen or the equivalent of R$31,000 for just 121.90 g.
In an effort to claim the prestigious Guinness World Records title, Japanese ice cream company Cellato has created a highly exceptional treat using expensive and rare ingredients.
Anyone who has tried it guarantees that it is indisputably remarkable. The ingredients are to blame for the exorbitant price, especially the rare white truffle grown in Alba, Italy, which costs 2 million Japanese yen (about R$ 71,300) per kilo.
Two types of cheese, an edible gold leaf and “Sakekasu”, a pasty component made from fermenting sake, are used to garnish the ice cream.
Cellato's goal went beyond simply creating the most expensive ice cream. To create an ice cream, they intended to combine components from Europe and the Japan.
Cellato hired Tadayoshi Yamada, head chef at RiVi – an Osaka restaurant known for its creative fusion food, to do just that.
The ice cream comes with a metal scoop handcrafted from the same materials as the temples and shrines when ordered through the Cellato website. They suggest drizzling white truffle oil over the ice cream before blending it until smooth.
Unfortunately, the Guinness World Records team was unable to savor this exquisite treat. However, Cellato employees who participated in the tasting claim that the ice cream has a deep flavor and texture.
They claimed that once the powerful aroma of white truffle fills your language and nose, the rich, luscious flavors of Parmigiano Reggiano follow. Sake lees complete the exquisite taste experience.
“It took us over a year and a half to develop, with a lot of trial and error to get the flavor right. Getting a Guinness World Records title made all the effort worthwhile.” said a representative of Cellato.
Despite setting a record, Cellato isn't content to sit back and celebrate. They have plans to introduce products that include additional premium components like champagne and caviar.
